Enjoying all that the warm, tropical waters of Fiji have to offer, Brisa Hennessy's been stationed on the island of Namotu the last few months. Keeping her surfing tack sharp, she's also been been keeping both herself and her fans entertained in the kitchen.
Sharing her cooking secrets on her YouTube channel, the 20-year-old Costa Rican just posted a compilation of a week's worth of plant-based dinners. Part of her "Breezy Cooking with Brisa" series, she goes through seven different vegan recipes, including pizza, Asian bowls, vegetable lasagna, Indian curry, vegetable enchiladas, Ceasar salad and pad Thai.
During quarantine, Brisa and her family have been living on Namotu, enjoying life on the secluded island. They've also planted a flourishing garden, which they use to add fresh veggies to the plant-based dishes. The family takes time to get creative with new recipes, always changing it up and finding new dinner inspiration.
"Mom and I have cooked dinner every night for almost six months straight and its been fun and challenging creating new recipes all while keeping it fresh and exciting," Brisa explains.
